My grandmother taught me how to make this cake when I was a little girl. It's easily one of the most delicious chocolate cakes I have ever made.

WACKY CAKE

1 1/2 cups unbleached all-purpose flour

1 cup sugar

3 tablespoons unsweetened cocoa

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon vanilla

1 teaspoon vinegar

5 tablespoons vegetable oil

1 cup cold water

In a large mixing bowl, mix flour, sugar, cocoa, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour the cold water over the mixture and stir until moistened. Pour into 8 x 8-inch pan. Bake at 350掳F. oven for 25 to 30 minutes, or until it springs back when touched lightly.
You might be able to pull off a coffeecake in that amount of time, but not a layer cake...

Quick Cinnamon Streusel Coffeecake

Serves 8. Published December 12, 2006.

To make the coffeecake even faster to prepare in the morning, prepare the streusel and measure out the dry ingredients for the cake the night before.

Ingredients

Streusel

1/3 cup packed light brown sugar (2 1/3 ounces)

1/3 cup granulated sugar (2 1/3 ounces)

1 tablespoon ground cinnamon

1 tablespoon unsalted butter , melted and cooled

1 cup pecans, almonds, or walnuts , chopped coarse

Cake

3 cups unbleached all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon table salt

1 3/4 cups buttermilk or whole plain yogurt

1 cup packed light brown sugar (7 ounces)

1 cup granulated sugar (7 ounces)

3 large eggs

7 tablespoons unsalted butter , melted and cooled

Instructions

1. For the streusel: Mix sugars, cinnamon, and melted butter together in medium bowl until mixture resembles wet sand; stir in nuts and set aside.

2. For the cake: Adjust oven rack to middle position and heat oven to 350 degrees. Generously coat 13 by 9-inch baking pan with nonstick cooking spray.

3. Mix flour, baking powder, baking soda, cinnamon, and salt together in large bowl. Whisk buttermilk, sugars, eggs, and melted butter in separate bowl until smooth. Using rubber spatula, gently fold egg mixture into flour mixture and stir until batter looks smooth and well combined.

4. Using rubber spatula, scrape batter into prepared pan and smooth top. Sprinkle streusel evenly over batter. Bake until streusel is golden and toothpick inserted into center comes out with just a few crumbs attached, 40 to 45 minutes. Cool cake on wire rack for 15 minutes before slicing and serving.

Here is a recipe I make with Semolina and it is less ,way less than 1 hour.

Halva with Semolina!

You need:

2 cups semolina,regular size

1 cup vegetable oil

1 cup almonds,blanched and chopped

Lemon jest

2 cups sugar

41/2 cups hot water

Cinnamon for sprinkling

In a big pot dissolve sugar in the hot water, let stand.

In a pot. add the oil and almonds to cook in med. heat until nice and golden. Add the semolina and adjust heat to low stirring constantly with a wood spoon.

Add the lemon jest.

Don't leave unattended it burns easily.

You need your semolina to have a nice golden color.

Remove from heat and place the pot with semolina in the sink, add the hot water very carefully, because it bubbles up,stirring until the liquid is absorbed.

Place your mixture in a cake mold and let cool.

Turn the cake up side down in a nice platter and sprinkle with cinnamon .

Serve with a little whip cream on the side.

Tip: To blanch the almonds place them in a bowl and enough water to cover and nuke them for 4-5 min.Remove skin and put them dry before you add them in the oil.
It doesn't get any easier, or better, than this chocolate cake recipe. Start to finish in less than 45 minutes. Step-by-step pictures are in the link in the sourcebox.

In a large bowl, combine all of the dry ingredients. Make a well in the center and add all of the wet ingredients. Mix well with a wire whisk until the batter is smooth.

Pour into the 9 x 13 baking dish and bake for 25 to 30 minutes.

Check by inserting a toothpick in the center. If it comes out clean, the cake is done. If not, bake another 5 to 10 minutes or until done.
