Strawberry Poke Cake

Ingredients

1 white or yellow cake mix

Tub of Cool Whip

1 Cup (or more) Fresh Sliced Strawberries

1 package of strawberry Jello

Directions

Bake cake as directed in a 9X13 pan. Allow to cool. With the handle of a wooden spoon or with a fork poke holes randomly around the top of the cake.

Mix the jello according to the directions and pour over the cake. Allow to gel (a few hours in the fridge). Use the Cool Whip as the frosting and top with sliced strawberries.

Sometimes I sprinkle some coconut on top too...It's great if everyone likes coconut.
Buy strawberry cake mix, get some frozen chopped strawberries they are pretty cheap. You will also need a tub of cool whip. Follow instructions on the cake mix and thaw strawberries while cake cooks make sure you drain them well in a bowl. When cake is done and cool poke small holes in cake with toothpick or fork and pour some of the strawberry juice over the bottom layer, then mix some of the strawberries with the cool whip and frost just the top of bottom layer, then put on top layer and repeat then frost the sides as well. This cake will need to be refrigerated to make sure cool whip does not melt, also make sure your cake is completely before you try this.

7 cups confectioners' sugar

Freshly sliced strawberries, for garnish, optional

Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.

Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.

---For the frosting:----In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup of the strawberry puree and the vanilla extract. Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

******Strawberry Layer Cake *****

1 cup light cream

1/2 cup butter

1 1/2 cup sugar

2 teaspoons vanilla

4 eggs

1 3/4 cup flour

3 teaspoons baking powder

1/2 teaspoon salt

1/2 cup powdered sugar

2 cups heavy cream

1/2 cup strawberry jam

1 pint fresh sliced strawberries

Preheat oven to 350 degrees F. Grease a 9-inch springform pan. Heat cream and butter until butter melts.

In a medium bowl beat sugar, vanilla and eggs until light and fluffy. Combine flour, baking powder and salt. Add dry ingredients to egg mixture alternately with cream/butter mixture, beating well after each addition. Pour batter pan and bake for 50-60 minutes or until cake tester comes out clean. Cool 10 minutes in pan, then remove from pan and cool on wire rack completely. Cut cake into three even layers.

Whip the cream with the powdered sugar until thick. Place 1 cake layer on a serving platter. Spread with 1/4 cup of the jam, 1/3 of the whipped cream, and 1/3 of the strawberries. Place second cake layer on top, spread with 1/4 cup of the jam, 1/2 of the remaining whipped cream and 1/2 of the remaining whipped cream. Place third cake layer on top and garnish with remaining cream and strawberries.
Look at the packaging on philly cream cheese for cheese cake. Really simple, very cheap. Top with strawberries
