Frosting for my butter pecan cake?thanks!maybe with cream cheese,know any recipes?

I would go with this White Chocolate Cream Cheese Frosting





2 (8 oz) pkg Cream Cheese


14 oz bag of White chocolate Candy Melts


2 Tablespoons Lemon Juice


1 cup unsalted butter





Melt the candy melts as directed on pkg. Set aside to cool(but don't let it harden)..cream the cream cheese with a mixer, add in the meltd candy melts....once combined add in the butter and lemon juice. fridgerate for a half hour and then frost onto cake.





*its important to use Candy melts(i use Wilton) and not regular white chocolate ...regular white chocolate will make the frosting a thin (runny) consistancy... Candy melts can be found in the 'craft' baking section at wal-marts and targets. 1 pound cream cheese, softened


2 sticks butter, softened


1 teaspoon vanilla extract


4 cups sifted confectioners' sugar


Chopped pecans , for garnish


In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.





Garnish with chopped pecans
small can or 1/2 cup evaporated milk


2 egg yolks


1 1/2 cups sugar


2 tablespoons butter





blend the above in sauce pan and heat over medium heat to boiling. Stirring constantly til it reaches point of coating the spoon.





Stir in 2 cups shredded coconut and 2 cups chopped pecans. Add 2 teaspoons vanilla extract and spread on cake!!
Butter Pecan Coconut Frosting





Ingredients:


1/2 c Butter or margarine


1 c Half %26amp; half


1 c Brown sugar; packed


3 Egg yolks


1 ts Vanilla


1 c Pecans; chopped


1 c Flaked coconut





Instructions:


In heavy saucepan, melt butter. Add half %26amp; half, brown sugar and egg yolks,


blending with wire whip. Heat and stir until mixture starts to boil. Cook


and stir on low heat 5-7 minutes or until frosting has thickened. Add


vanilla; cool. Fold in nuts and coconut. Spread on cake.For firm frosting, refrigerate 30 minutes.
My grammie used to make butter brickle frosting for her butter pecan cakes.. it was so good.


I dont have a recipe for it, and have googled it and still dont see it..


It was like a brown sugar, caramel frosting with bits of crunch in it.. I had forgotten about those cakes until you posted that question.
