Easy Red Vevet Cake recipe?

I'm making a red velvet cake for a large family dinner in a few weeks. I'm a good cook, but simple baker :) I'd love to make a red velvet cake, but don't want to spend an entire afternoon in the kitchen just baking a cake. Can anyone give me a simple, but delicious recipe for a red velvet cake?Easy Red Vevet Cake recipe?
Not completely from scratch, but close...and easy:





2 tbsp cocoa (I like Ghiradelli double chocolate)


2 oz red food coloring


1 box white cake


1 sm box instant vanilla pudding mix


4 eggs


1 cup whole milk


1 tbsp white vinegar


1/2 cup vegetable oil





Preheat oven to 350. Grease %26amp; flour or spray two 8'; or 9'; cake pans. In a small dish, thoroughly combine the cocoa and food coloring and put aside. Mix remaining ingredients in large bowl on low speed for 1 minute. Add cocoa/food coloring mixture and mix for an additional 4 minutes on medium speed. Pour into pans and bake for 20-30 minutes. Do not overcook, or cake will dry out.





Icing:


8 oz Philadelphia cream cheese - softened


1/2 cup unsalted butter - softened


1 lb (box) confectioner's sugar


1 teaspoon vanilla extract


chopped %26amp; lightly toasted pecans





In a large bowl, cream the cheese %26amp; butter for 4 minutes. Add sugar until the mixture is fluffy. Add vanilla and mix.





Frost middle, sides and top of cake. Sprinkle top with pecans.





Refrigerate remainder of cake (if there are any) after serving. Lots of dairy ingredients and it will go bad!Easy Red Vevet Cake recipe?
Get the cake mix they are just as good and simple
Ingredients:


4 tablespoons cocoa powder


1 ounce liquid red food color


3/4 cup water


1 pudding-type cake mix (white or yellow)


4 eggs


1 teaspoon vanilla


1 teaspoon butter flavoring


4 tablespoons buttermilk powder


1 tablespoon white vinegar














Directions:





Heat oven to 325F.





Mix together cocoa powder, red food color, and a small amount of the water forming a paste. Add remaining ingredients except vinegar. Mix 2-3 minutes on medium speed until well blended. Add vinegar and blend completely. Pour batter into prepared 9'; x 13'; cake pan and bake for approximately 35 minutes or until toothpick inserted in center comes out clean.
EASY RED VELVET CAKE





1 box butter recipe cake mix (I use Duncan Hines)


3 eggs


2/3 c. Crisco


2 oz. red food color


5 tbsp. cocoa





CREAM CHEESE ICING:





1 (8 oz.) pkg. cream cheese


1 box 4X sugar


1 stick butter


1 tsp. vanilla


1 c. chopped nuts





Mix all ingredients in large bowl for 2 minutes at medium speed. Bake at 325 degrees for 30 or 35 minutes. Makes 3 (8';) layers or 1 (13';x9';x2';) pan.





ICING: Combine cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until light and fluffy. Stir 1 cup finely chopped pecans into frosting. Makes 3 cups frosting.
