If it doesn't need to be a layer cake, I have the perfect recipe for you - if you can get your hands on fresh raspberries. It's really basically a round brownie with raspberries stuck in it, but it looks amazing and tastes even better. And really quick to make.

Chocolate Raspberry Brownie Cake

1/2 cup butter

3 ounces unsweetened chocolate

1 cup sugar

1/2 cup chopped pecans or walnuts

2 large eggs

1 teaspoon vanilla

2/3 cup flour

1+ cup fresh raspberries -- rinsed and drained

Preheat oven to 350. Butter and flour a 9 inch round tart pan with removable rim. In a 2 to 3 quart pan over low heat, stir butter and chocolate just until melted, about 5 minutes. Remove from heat and mix in granulated sugar, pecans, eggs, and vanilla. Add flour and stir to mix well. Spread batter in pan. Place berries in circles starting at the rim (berries sticking upright). If you have enough berries to cover the top completely, go ahead, if not, just leave an empty circle in the middle. Gently press fruit into batter. Bake until top, at outside edge, cracks and feels firm to the touch, 45 to 50 minutes. Let cool in pan on rack. Dust with powdered sugar before serving.I need a cake recipe, that tastes really good %26amp; looks very fancy! For my Schools Cake Cookery competition?

Tahinopita

makes one 8-inch cake

for the dough:

2 ¼ cups all-purpose flour

3 ¼ tsp. baking powder

¾ tsp. kosher salt

¾ tsp. cinnamon

¾ cup tahini (raw or roasted; roasted lends a nice flavor)

¾ cup orange juice

½ cup sugar

¾ cup raisins

1/3 cup chopped walnuts

for the syrup:

½ cup sugar

1/3 cup water

Sift together the flour, baking powder, salt, and cinnamon and set aside. Place the tahini in a large mixing bowl and slowly drizzle in the orange juice while beating with an electric beater. Add the sugar and beat well for several minutes, until smooth and lighter in color.

Add the dry ingredients and mix well. The dough will be thick like cookie dough. Knead in the raisins and walnuts. Press into greased and floured 8” springform pan smooth out the top.

Bake for 35m 350ยบ. Can dust with powdered sugar or sugar syrup:

Boil the sugar and water together in a small saucepan for about 10 minutes to form a slightly thick sugar syrup. Drizzle the syrup liberally over the top of the cake and brush on the sides.

For a more traditional cake:

Vegan White Cake

1 1/3 cups sugar

1/2 cup margarine or vegetable shortening

3 cups flour

1 tablespoon baking powder

3/4 teaspoon salt

2 cups soymilk

1 tablespoon vanilla

1 teaspoon almond extract

Cream sugar %26amp; shortening. Sift the flour, baking powder and salt together in a separate bowl. Add about a cup of the flour mixture to the sugar/margarine mixture and stir. Next add about a cup of the soy milk and stir again. Keep alternating flour and milk until all of it is well incorporated. Add the vanilla and almond extract and beat again using the electric mixer for about 2 minutes. Bake the cake at 350 F (preheated oven) for about 30 minutes. Let the cake rest in the pan for at least 20 minutes before removing it. Let it cool completely and then frost it with your favorite frosting if desired.

Fluffy White Frosting. Blend 1/4 cup flour and 1 cup milk, cook over medium heat until thick, cool. Cream together ½ cup butter, 1/3 cup shortening, 1 tsp vanilla, 1 cup sugar. Add the cooked milk mixture, whip until it looks like whipped cream. Variation: add cocoa for chocolate fluffy frosting.

a Red Velvet Cake always seems to impress people.

If you can get to a store, just buy a box of red velvet cake mix and use a white creamcheese or buttercream frosting.

If you want to make it from scratch, here is a link. It will take about an hour to make and frost the cake.

Good luck!

Oh, and if you can, get a bottle of red colored sprinkles to put ontop and around the cake, if you can!
