Latvian apple cake recipe?

Does anyone have a recipe, preferably quick and easy. I know it has a doughy base and apples sprinkled with sugar and cinamon on top. My mother knows one but will not share it - because she does not like it (this month, last month she was raving about it!)Latvian apple cake recipe?

Ingredients :


6 cooking apples


250g butter + a little for greasing the cake tin


250g caster sugar


4 eggs


200ml cream


200g SR flour


1 good pinch salt








Recipe :


Preheat oven to 700°F (210°C), grease a deep 28 cm cake tin.





Peel the apples and cut into quarters, removing core and pips. Cut each piece lengthways, into three or four.





Melt 50g butter in a pan and saute apples on both sides. Once they are soft, sprinkle with 50g caster sugar then brown, without caramelising. Arrange evenly in cake tin.





Gently melt the rest of the butter.





Beat eggs and sugar with an electric whisk, until you have a moussey consistency. Continue beating as you add the melted butter and cream.





Mix flour and salt together, add to mixture and continue to beat. Once you have an even paste, pour over apples in cake tin.





Bake in the middle of the oven for 40 to 45 minutes. Leave to cool for 10 minutes once out of the oven, then turn out onto a wire rack. Leave to cool completely.





Serve cake caramelised apple-side up, with custard.Latvian apple cake recipe?

I am not a good baker but this recipe is easy and doesn’t require an electric mixer.


APPLE CAKE





4 cup peeled and chopped apples


2 cups sugar


1/ 2 cup raisins


1 tsp. cinnamon (or 3/ 4 tsp. cinnamon and 1/ 4 tsp. nutmeg)


2 cups flour


1 tsp. salt


1 1/ 2 tsp. baking soda


2 eggs


3/ 4 cup vegetable oil


1 1/ 2 tsp. vanilla extract


1 cup chopped nuts





Mix together apples, raisins, sugar and cinnamon (and nutmeg, if used) in a large bowl and stir thoroughly. Let this mixture sit for one hour, stirring occasionally. Juice will begin to form – do not drain off. Meanwhile, mix together flour, salt, and baking powder in a separate bowl. Grease and flour a 9” X 13” pan.





After the apples have marinated for an hour, preheat oven to 350 degrees. Mix together the eggs, oil and vanilla and add to the apple mixture. Stir well, and then add the flour mixture. Mix well with a spoon and then add the nuts. Mix and pour into prepared pan.





Bake for about 45 minutes. Cool on a rack and cover and refrigerate any leftovers.

Notes: I like to substitute chopped dates for the raisins. Walnuts are the traditional nuts for this cake but I have used pecans or more often, omitted the nuts altogether.
