VANILLA BATTER


8 oz cream cheese softened to room temperature


2/3 C sugar


1 large egg


1 t vanilla extract


CHOCOLATE BATTER


10 oz bittersweet chocolate


10 T butter, cut into 6 pieces


3 large eggs


1/3 C sugar


1 T rum or espresso


1 t vanilla


pinch salt











Move oven rack to middle and heat oven to 300. Lightly grease a 9x2 round cake pan and line bottom with parchment.





For VANILLA BATTER: Beat cream cheese until smooth. Add sugar and keep beating until well blended. Add egg and vanilla and beat until just blended. Set aside.





For CHOCOLATE BATTER: Melt chocolate and butter together. Whisk until smooth and set aside to cool slightly. Beat eggs, sugar, rum, vanilla and salt on high until mixture is pale and thick, about 3 to 4 minutes. Switch mixer to low and slowly pour in melted chocolate until well blended.





Spread half of the chocolate batter on to the bottom of the pan. Alternately add large scoopfuls of each batter to the pan. Use a knife to gently swirl two batters together so they're mixed but not blended [it will look swirly and marbleized.] Rap the pan against the counter a few times to settle the batters.





Bake 40-42 minutes. Cool and then refrigerate until very cold, at least four hours

Moist Devil's Food Cake





Makes 1 eight-inch-round 3 layer cake








1 1/2 cups (3 sticks) unsalted butter, plus more for pans


3/4 cup Dutch-process cocoa powder, plus more for pans


1/2 cup boiling water


2 1/4 cups sugar


1 tablespoon pure vanilla extract


4 large eggs, lightly beaten


3 cups sifted cake flour(not self-rising)


1 teaspoon baking soda


1/2 teaspoon salt


1 cup milk





1. Heat oven to 350掳; arrange two racks in center of oven. Butter three 8-by-2-inch round cake pans; line bottoms with parchment. Dust bottoms and sides of pans with cocoa powder; tap out any excess. Sift cocoa into a medium bowl, and whisk in 1/2 cup boiling water. Set aside to cool.





2. In the bowl of an electric mixer fitted with the paddle attachment, cream butter on low speed until light and fluffy. Gradually beat in sugar until light and fluffy, 3 to 4 minutes, scraping down sides twice. Beat in vanilla. Drizzle in eggs, a little at a time, beating between each addition until the batter is no longer slick, scraping down the sides twice.





3. In a large bowl, sift together flour, baking soda, and salt. Whisk milk into reserved cocoa mixture. With mixer on low speed, alternately add flour and cocoa mixtures to the batter, a little of each at a time, starting and ending with flour mixture.





4. Divide batter evenly among the three prepared pans. Bake until a cake tester inserted into center of each layer comes out clean, 35 to 45 minutes, rotating the pans for even baking. Transfer layers to wire racks; let cool, 15 minutes. Turn out cakes, and return to racks, tops up, until completely cool. 5. Remove parchment from bottoms of cakes. Reserve the prettiest layer for the top. Place one cake layer on a serving platter; spread 1 1/2 cups chocolate frosting over the top. Add the second cake layer, and spread with another 1 1/2 cups frosting. Top with third cake layer. Cover outside of cake with the remaining 3 cups frosting. Serve.





My Mom's Icing Recipe





1/3 cup butter, softened


1/3 cup Cocoa


2 cups icing sugar


2 tbsp hot water


1 teaspoon vanilla extract


1 tub cream cheese





In a mixer mix butter and cocoa on low speed (it will take quite awhile for it to blend but suddenly it comes together, 30 secs about...hang in there). Add vanilla and water. Then add one cup icing sugar at a time until well blended (it takes awhile here too). Add cream cheese and beat until smooth.





My Notes: The cake was a huge success...I didn't make any changes to the recipe but I ended up freezing one of the layers and only used 2. It was super moist, super chocolately, it tasted like a cake from a box only it was made from scratch, it was also seriously super easy to make. I didn't even use parchment in the pans and they came out beautifully!

Fudge Coca Cola Cake





1 C. Coca-cola


1/2 C. vegetable oil


1 stick margarine (1/2 cup)


3 T. cocoa


2 C. sugar


2 C. flour


1/2 t. salt


2 eggs


1/2 C. buttermilk


1 t. baking soda


1 t. vanilla





In a sauce pan, bring Coca-Cola, oil, margarine, and cocoa to a boil, mix the sugar, flour and salt, Pour in the boiling liquid and beat well. Add the eggs, Buttermilk, soda, and vanilla and beat well. Pour into a greased and floured sheet cake pan, and bake at 350掳 F. for 20-25 minutes.





Frosting:





1/2 C. margarine


3 T. cocoa


6 T. cream or milk


1 t. vanilla


1/2 to 1 C. pecans, chopped


1 lb. confectioners sugar





In a saucepan, combine the butter cocoa, and milk and heat until the butter melts, Beat in the remaining ingredients, and Spread on the hot cake. Cool and cut.

CHOCOLATE MAYONNAISE CAKE


2 cups Flour, unsifted


2/3 cup Unsweetened Cocoa


1 1/3 tsp Baking soda


录 tsp Baking powder


1 2/3 cup Sugar


3 Eggs


1 tsp Vanilla


1 cup Hellmann鈥檚 mayonnaise


1 1/3 cups water


1. Grease and flour the bottoms of two 9 inch round cake pans


2. In medium bowl stir together flour, cocoa, baking soda and powder, set aside


3. In large bowl using mixer at high speed beat sugar, eggs and vanilla, occasionally scraping bowl, 3 minutes or until light and fluffy


4. Reduce speed to low and beat in mayonnaise


5. Add flour mixture in 4 additions alternately with water, beginning and ending with flour


6. Bake at 350 degrees for 30-35 minutes or until cake tests done


7. Cool pans for 10 mins, remove and cool on wire rack


8. Frost if you wish but this cake is so moist and good it just needs a sprinkling of powdered sugar





CHOCOLATE CHOCOLATE CHOCOLATE CAKE


1 pkg Chocolate cake mix


1 pkg Instant chocolate pudding mix


1 cup Sour cream


陆 cup Oil


陆 cup Warm water


4 Eggs


1 陆 cup Semi-sweet chocolate chips


陆 tsp Vanilla


陆 tsp Almond extract


1. Combine all but chips in large mixing bowl


2. Beat 4 minutes, fold in chips


3. Pour into a 9 x 13 inch pan


4. Bake at 350 degrees for 60-70 minutes


5. Frost with your favorite chocolate frosting

If you aren't going to use the caramel frosting, don't bother. It is to die for!
Oreo do-it-yourself cake!





Make a basic for a cake but then add the oreos which has been chrushed/blended after removeing the cream.


add a little bit of vanilla/coffee essance.
